Feel free to adjust ingredients to your liking or taste
This is not to be confused with my Secret Jerky Recipe
Get 2 pounds of flank steak or top round.
Trim as much fat off as possible
Slice into 1/4" to 1/2" strips.
Slice the meat against the grain for a more tender jerky.
Slice with the grain for chewy jerky.
Mix the following ingredients into a large bowl.
3/4 cup water
3/4 cup Worcestershire
3/4 cup soy
1 1/2 teaspoons liquid smoke
1 1/2 tablespoons brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
2 tablespoon ground black pepper
Place the strips into the bowl and place in the refrigerator for 24 hours to marinate.
Lay the strips of meat out on aluminum foil and sprinkle a seasoning of your choice.
Place aluminum foil on bottom rack of oven. Hang jerky from top rack of oven with toothpicks or skewers and dehydrate in oven at 170 degrees for 4-6 hours depending thickness of jerky.
The lowest setting on my oven is 200 degrees. I prop the door open with a toothpick. This lets some of the moisture escape and also drops the temperature down to around 170.
After dehydrating, the jerky will weigh considerably less.
